Like bananas? Like pancakes? Then you're going to love these!
I'm always searching for a healthy pancake recipe so that I can eat as many pancakes as I want without feeling too guilty,especially this Pancake Day! I've tried a few different recipes now, and this is the one I've found to be the most tasty, contains the fewest ingredients, and just generally makes the best pancakes! Here's what you need:
1 banana.
2 eggs.
That's it! All you need to do then, is mash the banana and mix with the eggs. Add a little oil into a pan and pour in like you would a normal pancake. Flip when it's ready and bravo, you have yourself a pancake! The ingredients I've listed make about 4 pancakes the size of the one in the photo (sorry for the poor photo quality!) so feel free to double up ingredients if there's more of you or you're feeling extra hungry! My favourite topping to go with them is honey, as pictured, but seeing as these are pretty good for you, I don't think a little chocolate spread would hurt! I usually like to chuck some strawberries and blueberries on there too, just to make it extra yummy.
